Bernardo Rojas Colala has been growing coffee for 18 years in the San Ignacio district. The micro-region lies in the north of Peru, nestled away in the high altitudes of the Andes mountain range. Coffee cherries at Las Orquideas grow with a characteristic bright yellow colour that carries ripe peach, sweet citrus and golden raisin flavours. The espresso has a distinct maple syrup aroma backed with marmalade and dried fruit qualities. The cup profile is silky and clean, and the body is held together with good balance and structure.
The Cup of Excellence contest has really expanded the audience and spurred greater appreciation for the high quality coming out of Peru – and the San Ignacio district is home to several of the finalists. At Bernardo’s 10 hectare farm, half the land is dedicated purely to natural conservation and coffee farming. With a focus on sustainability, 4 hectares of protected native forest surround a 1 hectare site dedicated exclusively to coffee production. Our lot was selectively harvested between the end of July and early September, then it was depulped and washed before an 18-hour underwater fermentation.
